My mother used to make this around Christmas time. She would serve the ricotta cheese cake with a glass of chilled Marcella wine or a cup of espresso coffee.

Ingredients

3 lbs ricotta cheese    
cup flour    
cup sugar    
8   eggs   large grade A
¼ tbs cinnamon    
2 tbs orange zest grated  
2 tbs vanilla    
1 pinch salt    
Preparation
Cooking
  1. Place all ingredients but eggs into mixing bowl (2 minutes)
    Add ricotta cheese, sugar, flour, cinnamon, orange zest, vanilla, and salt into a mixing bowl. Mix well.
  2. Add eggs one at a time to the mixture (3 - 4 minutes)
    Add one egg at a time to the mixture and blend in. Repeat process until all eggs are added.
  3. Pre-heat oven to 400°F and place mixture into a baking pan (3 minutes)
    Place mixture in a baking pan and pre-heat oven to 400°F.
  4. Place baking pan with mixture into oven (10 minutes) (400°F)
    Place the baking pan in the oven for 10 minutes.
  5. Turn heat down on oven (50 - 60 minutes) (200°F)
    Turn down heat to 200°F and heat an additional 50 - 60 minutes.
  6. Remove and serve
    Remove pan from oven. Let cool and serve.
