4   NY strips   4 to 5 oz each, meat should be evenly marbleized for tenderness and better taste
1   eggplant    
8 slices provolone cheese    
12 oz marinara sauce   see recipe for marinara sauce or use any brand of marinara sauce that you like
5 tbs flour    
  dash white wine   your choice
6 tbs extra virgin olive oil

  1. Pre-heat large frying pan (large enough to hold 4 steaks)
    Pre-heat frying pan on med heat and add 6 tbs of olive oil.
  2. Add eggplant and brown (4 minutes) (medium heat)
    Add eggplant and brown on both sides (about 4 minutes), remove and set aside.
  3. Add steaks to pan (2 minutes) (high heat)
    Turn stove up to high heat. Add steaks and brown 1 minutes on each side and remove. (Note: make sure there is enough olive oil left at the bottom of the pan to coat it. If not add more oil till coated.)
  4. Coat baking dish bottom with marinara sauce
    In a baking dish (large enough to hold 4 steaks) coat bottom of the dish with marinara sauce and save the rest for later to place on top.
  5. Layer steak, eggplant and cheese in baking dish
    Place steaks in baking dish, and then place eggplant over top, then cheese, so it's layered. Pour remaining marinara sauce over top.
  6. Place in oven and bake 25 - 30 minutes (350°F)
    Place the baking dish in oven and bake for 25 - 30 minutes at 350°F.
  7. Remove and serve
    Remove the baking dish from the oven and place steaks on serving plates and pour remaining sauce from dish over top of the steaks evenly and serve.
