Welcome from the Team
On behalf of Maître D', Dr. A and myself, Chef Peppino, welcome
to the kitchen!
Peppino's Cuisine
As an Italian by background, of course I offer many dishes that
are Italian in name or nature. These have all been devised by me and my team,
tested by us, tasted by us, and served to our customers over many years.
We'll be bringing you new dishes every month, and leading
you on a taste tour of many other Mediterranean diets, Greek, Spanish, French,
Moroccan, Lebanese. To help you, our recipes are organized step by
step; there is a tool to help you plan your meals, or to select dishes
according to ingredients you have available at home. "What can I make with
the onions, carrots and zucchinis I have in the fridge?" You can even
plan whole menus.
And no, we won't do life insurance: we think the Mediterranean diet is better!
A Mediterranean Attitude
Yes, my kitchen has its roots firmly in the
Mediterranean. And as the Mediterranean used to be thought of as the center
of the world, the kitchen for me, whether in my restaurant, or your home,
is the center of my world and the heart of my house. It's a key feature of
the Mediterranean approach to buy and use local ingredients where we can.
So you'll not be surprised that we use some ingredients that you don't find
in the Mediterranean in our dishes. But as the famous medieval English King,
King Alfred, said when he was caught in the kitchen burning cakes, sometimes
when you translate, it's word for word and sometimes it's sense for sense.
Translating the Mediterranean kitchen into American is a sense for sense
job.

We even help you set up your own Mediterranean
kitchen. What utensils do you need? Knives? Spices? Olive oil?

A Family Business
The rest of the family is there to help. My Maître
D' will give you serving tips and hints throughout on how to get the best
out of the dishes you cook, what to drink with them - beverage or wine. I
wish he were as cordial to me in the kitchen as he's helpful to the customers,
but he never stops telling me that the customer is king, and I keep telling
him that we kicked the kings out of Italy years ago, not to mention America.
And then there's the brains of the family, Dr. A.; he's got more degrees than a thermometer; but I guess we all now understand that some good science will help some good cooking. He's assembled articles explaining a lot about the Mediterranean diet.
